Royal icing

  1. Cream the butter with the sugar.
  2. Combine

Beat the egg with the honey and orange zest and combine with the creamed butter and sugar.

  3. Add dry ingredients

Add all the dry ingredients and mix, but do not knead.

  4. Store

Form into a disk and wrap in plastic. Store in the fridge for 1 hour for the dough to hydrate.

  5. Cut cookies

Roll out the dough to 1/2 cm thick and cut into 3 cm circles.

  6. Bake

Bake in a preheated oven to 160°C for 8-10 minutes. Then cool the cookies.

Do not brown the cookies, because they will harden.
  7. Fill

Make the sandwich cookies with dulce de leche for delicious alfajors.

TIP: You can make a quick royal icing following the steps below.

Once you make the royal icing you will need to use it right away or it will dry out.

Royal icing

  1. Prep

Beat the egg white with the powdered sugar and the lemon juice.

  2. Make syrup

Boil your water and add the water sugar, and when the syrup is ready, add to the icing even though it's hot.

  3. Mix for a few seconds to combine
The icing will be thin, which is on purpose. Dip your Alfajors in icing right away since it will dry out. Enjoy!
