  1. Chop and prepare ingredients.
  2. Cook bacon until it's almost done. Add extra oil if needed and add the other veggies (minus) potatoes.
  3. When the carrots are almost done, add your potatoes.
    You want some color on the veggies and potatoes. Don’t be afraid of not mixing that much.
  4. Season heavily.
    Potatoes soak up a lot of seasoning. If it’s getting a bit dry while cooking, you can add more oil or a splash of water. Enjoy. This can be reheated and it’s really good with a fried egg on top. Runny yolk please.
