  1. Gather ingredients

    Pre-heat oven to 180°C.

  2. Prep

    Cut the ends of the zucchini and slice them about 1/2 cm thick. Take each one and cut almost all the way through - see photo.

  3. Fill each one with cheese
  4. Prep for breading

    Scramble the two eggs with 1/4 tsp of salt and pepper, and add the rest of the salt and pepper to the corn flour. Submerge each zucchini slice in the egg mixture.

  5. Then coat in the corn flour
  6. Cook

    Finally, take a tray and lightly coat with canola oil (or any other), place the zucchini bites on the try and drizzle a little more oil on top. Bake them in a pre-heated oven at 180°C for 20 minutes.


If you prefer, you can also fry them.

You can use normal breading instead of corn flour if you prefer, if that is what you have on hand.
