This is a recipe that was shared with us from Brazil. Thank you J. P.! It calls for “mandioquinha” (Brazil) or “zanahoria blanca” (Ecuador), which is a root vegetable found in the Andes (See Wikipedia for more information).
Boil the mandioquinha until soft.
Mash the mandioquinha
In a bowl place the mandioquinha, the oatmeal, the salt and mix. Then add the shredded chicken and mix well.
Shape the meatballs.
Bring the Air fryer to 200ºC to bake until golden brown.
