  1. Grate four plantains and mix with the peanut butter, achiote and a little salt.

    Mix until well combined.

  2. Make the refrito in a saucepan.

    Finely dice the garlic, onion, and pepper. Add the chopped chives and the cilantro. Add a little achiote, salt, and pepper. Once the onions are caramelized add 3 TBL of peanut butter and stir.

  3. Take a portion of the plantain mixture and fill it with the refrito with peanut butter, add tuna to the filling, and mold into a long football shape. Deep fry until dark golden brown (around 15 minutes).
  4. Can be served with basil mayonnaise, a peanut sauce, or with a pico de gallo and sliced avocados.
