This is a typical Ecuadorian meal that is simple to prepare, and if you like seafood the coconut gives it a special touch.

To marinate the fish

For the stew (encocado)

  1. Gather your ingredients
  2. Marinate

In a small bowl, add the fish fillets, juice the limes and add the smashed garlic, ground cumin, ground pepper and salt. Mix well and if you have time leave to marinate in the fridge for at least 1 hour.

  3. Prepare base
Heat the oil to prepare the base (known here as refrito o sofrito). Add the onion, pepper and tomato paste and cook on medium for 5 minutes.
Add the fish and partially cover and cook on low for about 5 minutes.
  4. Finishing touches

Add the coconut milk and parsley or cilantro and stir carefully. Then cover and cook for 10 minutes on low. The exact time will depend on the thickness of the fish.

  5. Final result!

Serve with fried plantain (patacones o tostones), rice or fried ripe plantain.

The fish marinate if important to give it flavor, so if you can leave it for longer (2 or 3 hours), the better.

Once we add the fish, only stir carefully to not break up the fish.

This recipe can also be used for chicken or shrimp.
