  1. Make the dough

    Mix the 200g of water with the yeast and malt and set aside. In another bowl add the flour and gradually add the water mixture and knead for around 5 minutes. Your dough will be a little sticky, which is normal. Drizzle a little oil on the dough for it not to dry out, and cover with a damp towel and plastic wrap for an hour.

  2. Prep the dough

    Grease two pans (11x13 or similar size) with olive oil so that the dough does not stick. Divide the dough into two and add to the pans. Lightly press down on each dough and leave it to rest for another 30 minutes.

    You will see that the dough will rise again. With the tips of your fingers extend the dough to the edges, cover it again and leave to rest for another 30 minutes.

    Preheat oven to 180°C (375°F).

     
     
  3. Add toppings

    Mix the 1/2 cup of water with the oil and pour over each of the doughs, and with your fingertips make indentations without piercing through completely.

    Finally, add the sliced onion, olives, cherry tomatoes and kosher salt.

  4. Bake

    Bake in the preheated oven at 180°C (375°F) for 30 minutes.

Notes

If you reduce the yeast and double the rest time, your focaccia will have better flavor.
