Cut the plantain in 2 cm thick slices.
Bring the oil to high heat in a deep pot, and when it is hot fry the plantain slices for about 2-3 minutes. If they are not completely cooked it is fine, we have another round of frying to do.
Prep for second round
Remove the precooked slices and smash them.
Prep for frying
Soak in salted water to taste for a few seconds and remove them.
Second round of frying
Fry until golden brown.
These go well with fried eggs, cheese, and coffee, or as a side dish. Enjoy!
