  1. Chop up your choices of vegetables and or meat.
  2. Beat the eggs and season to taste.
    For a medium size pan, 3 eggs is about right.
  3. Sauté in olive oil the vegetables and meat and season.
  4. Add the eggs and stir gently got the first 30 seconds, then let it be. About 1 to 2 minutes later, lift the edges and let the uncooked egg run under.
  5. When the egg is set, but not all the way cooked, you have two choices. One, using a plate flip it to cook the other side very quickly. Or two, put it in the toaster on broil for a few minutes.
    This is where I add cheese if desired. Usually I would use a melting cheese or parmesan, but I didn’t have either at the time.
  6. Serve in wedges.
    Frittatas are great to use up extras in the fridge and are delicious cold in a sandwich.

Notes

Use what you have in the fridge. For it to be vegetarian, take away the meats. Dairy free, don't add the cheese. Need it to be healthy? Add some more veg. It's very flexible, so adapt to your taste and/or diet.
