Quite a long name, but delicious! This is not a traditional version. However, it is perfect for when you want something sweet and creamy, but you’re on a diet. It’s a combination of panna cotta and American style pudding.

Panna Cotta

  1. Gather your ingredients
  2. Prep gelatin

    Add the gelatin and grapefruit juice into a small pot. Leave it to soak for 3-5 minutes. You will see the gelatin expand.

  3. Heat

    Add the sugar, salt, and zest to the pot. Heat until everything is dissolved.

  4. Yogurt

    Add the vanilla to the yogurt and mix.

  5. Add gelatin mix

    When the gelatin mix is ready, add it right away to the yogurt as you mix. Beat until well combined.

  6. Glasses

    Pour into glasses. Refrigerate until it thickens, at least 2 hours. After 1 hour you can add the sauce on top.

    This recipe makes 4 glasses of 6 oz, or 6 glasses of 4 oz. This will keep in the fridge for up to 2 days.

Blackberry sauce

  1. Boil

    In a small pot, boil the blackberry juice with the sugar. When it boils, add the cornstarch (previously made into a paste with 1 tsp of water) to the juice. Continue mixing until it thickens (about 2 minutes).

    Cool for at least 30 minutes before putting on top of the panna cotta.
