Honey oatmeal bread

Ingredients
Gather your ingredients and heat the water and milk.

Yeast
Mix the water, milk, and honey. Add the yeast. Wait for around 10 minutes until you see the bubbles from the yeast activating. Add the butter to soften.
Do not overheat the water and milk, since if it too hot it can kill the yeast. -
Mix
Mix the dry ingredients (flours, salt, oatmeal) in a large bowl. Add the wet ingredients and mix until you have a soft dough.

Knead
Put the dough on a lightly floured surface and add a little flour on top. Knead for 5 minutes. This is a soft and sticky dough and requires a bit of patience. It will come together, as you can see in the video below.
Leave the dough to rest for 10 minutes (this will help form the gluten).
If the dough is too soft and very sticky, add a TBL or two of flour. When making bread, the temperature, humidity, and other factors can affect quantities. -
Finish kneading
Knead for about 5 more minutes until the dough is slightly sticky and elastic.

First rest
Place the dough in a greased bowl (to avoid sticking) and cover with plastic wrap. Leave to rest for 1 - 1.5 hours until it doubles in size.
The time to rest depends on the temperature, weather, and other things. It is best to judge the time by how the dough is developing. -
Form the loaf
When it had doubled in size, put the dough on a lightly floured surface.
Stretch out the dough into a rectangle that is slightly larger than your mold and fold the ends as you see in the photo.
Roll the dough and place it in your greased mold, and cover with plastic.

Second rest
Leave to rest for 1 - 1.5 hours until it doubles in size.

Preheat the oven
About 15 minutes before the bread has finished resting, preheat your oven to 180°C (350°F).

Cut
Before baking your bread in the oven, make small cuts on the top of your loaf.

Bake
Bake in the oven along with a oven-resistant pan with a little water. This will create vapor for about 15 minutes, and after that you can remove the pan.

Cool
Bake for 40-45 minutes, or until the bread has browned. Remove from the mold and leave to cool for at least 30 minutes before slicing.
