  1. Add about 2 cups of cooked beans to a blender or food processor.
  2. Add tahini, salt, garlic, pepper, ground cumin and the lime or lemon juice.
  3. Add salt and the cooking liquid to taste and to desired thickness. It will thicken on standing.
  4. Top with olive oil and paprika as desired.

Notes

Hummus is very easy to adapt. You can add: herbs, sun-dried tomatoes, roasted peppers, chiles, etc. 

This will keep in a sealed container in the freezer for up to 2 months. You will have to defrost the night before in the fridge.
