  1. Gather your ingredients
  2. Dice

    Chop and dice your ingredients.

  3. Sauté

    Heat a large pan with 2 TBL of olive oil. Sauté the mushrooms, onion, and pepper on medium-high heat for 3-4 minutes or until they begin to soften. Season with salt and pepper (remember that you can always add more at the end, but you can't take away).

  4. Sausage

    Add the sausage, garlic, hot peppers, and oregano. Sauté until they are cooked and lightly browned (about 5-8 minutes). Add the vinegar and cook for another minute. Check the salt and pepper and serve in your rolls.

Notes

Potato variation:

You can make this recipe gluten free (no bread). Along with the onions and peppers, you can add 2 cooked potatoes cut in thick strips and continue with the rest of the steps (it may take a bit longer to cook). It would be best to test the vinegar, salt, hot pepper, and pepper levels since potatoes in general need more seasoning. It may also be necessary to add another TBL of olive oil.
