Lime bars

  1. Preheat oven to 170°C (325°F).

    Mix the flour, sugar, salt, and add the cold cubed butter. Mix, preferably with your hand, until it has a sandy texture, and everything is well combined.

    Be careful not to overmix the dough because the butter will begin to melt, and you will end up with a creamy paste that will stick to your hands.
  2. Lay baking paper in your rectangular (or square) pan, so that it will be easier to remove and cut the bars.

    Put your dough in the pan, pressing and extending the dough to the edges like shown in the photo. Poke the dough with a fork for baking.

  3. Bake your dough in the preheated oven (170°C or 325°F) for about 20 minutes or until it is slightly brown. While it is baking, prepare your filling.

Filling

  1. Mix the eggs and extra yolk with the sugar, lime juice, lime zest, and flour until well combined.

  2. Once it is well mixed, add it to the baked crust.

    The crust does not have to be cooled to add the mixture.
  3. Bake everything at the same temperature (170°C or 325°F), but this time for about 25 minutes until the filling has set.

  4. When it's ready, remove and leave for about 2 hours until it is completely cooled. Then remove from the pan, remove the baking paper, and cut into bars (usually around 5 cm or 2 in).

    Decorate with powdered sugar using a sifter.

    You are ready to serve!

Notes

For a less tart experience, sub out the limes for lemons, but if you can try with the limes!
