Marbled cake (chocolate and vanilla)

Instructions

Prepare the vanilla mixture

  1. Crack three eggs in a bowl and add a pinch of salt and mix by hand. Do not overmix, if you do too much air will get into the mix and the cake will be full of holes.
  2. Add the sugar and mix a little bit more.
  3. Add the vanilla and cream (or whole milk).
  4. Add the flour and baking powder (it is recommended to sift both 2 or 3 times before adding them to the liquid ingredients to avoid clumps)
  5. Add the melted cooled butter.
  6. Mix all the ingredients and chill in the fridge for 5 to 8 minutes (while making the chocolate mixture).

Prepare the chocolate mixture

  1. Crack two eggs in a bowl and add a pinch of salt and mix by hand. Do not overmix, if you do too much air will get into the mix and the cake will be full of holes.
  2. Add the sugar and mix a little bit more.
  3. Add the vanilla and cream (or whole milk).
  4. Add the flour, cocoa and baking powder (it is recommended to sift 2 or 3 times before adding them to the liquid ingredients to avoid clumps)
  5. Add the melted cooled butter. Mix well all the ingredients.

Bake

  1. Grease your cake pan with butter or line it with parchment paper for easy removal.

    Remove the vanilla mixture from the fridge and put half in the cake pan. On top of it pour all the chocolate mixture, and on top of it the rest of the vanilla mixture. With the handle of a spoon move in the spiral motion from one side of the pan to the other (this is to create the marbled effect). Do not go too quickly, and don't go over the same place twice, since we don't want to mix them.

    Bake at 170℃ (350℉) for about 20 minutes. The oven should be heated from above and below. After 2o minutes, lower the temp to 160℃ (325℉) and leave only the lower burner on to avoid burning the top.

    Optional: make a chocolate glaze for the frosting. You can use cocoa powder with a little butter and milk, adding until you get the desired consistency. 

    When you cut into the cake, you'll see the marbled effect!

     
    Important: If you have a round cake pan, you can add the two mixtures this way: One TBL of the vanilla mixture, and let it expand. Then add a TBL of the chocolate mixture, then another TBL of the vanilla mixture, and so on. This will also give it the marble effect.
