  1. Combine the dry ingredients.
  2. Combine yogurt and milk (let sit 5 minutes or so).
  3. Add the eggs to milk mixture and mix well.
  4. Drizzle in the butter.
  5. Add wet ingredients to dry and mix slowly and for under a minute. Let the batter sit for 15-20 minutes.
    Small lumps are good. A thick batter is what you are looking for.
  6. Add your mix-ins if desired (bananas, walnuts, chocolate chips, blueberries, etc.). Heat up well a nonstick pan or griddle. Drop 1/4 cup amounts of batter per pancake.
  7. Flip when you see bubbles and the edge starts to dry a bit. Adjust your heat so you have a browned pancake when it’s time to flip. Cook approximately 1 minute on the other side. Serve with whatever topping you like.

Notes

These freeze really well. All you have to do is heat them up in the toaster when you want one.
