It’s quite easy to double this recipe for more portions or to freeze to use later.

  1. Gather your ingredients

    Dice the tomato and blend the canned tomatoes to the desired texture. 

  2. Preheat the pan

    On medium heat, add the olive oil and garlic and cook for 2-3 minutes. Please don't burn the garlic.

    It would be best to be cooking the pasta/spaghetti at this point. This recipe goes quick.
  3. Tomato

    Add the fresh tomato and pepper and flakes and cook for 2 minutes. Add the tomato paste (if desired) and cook for another minute.

  4. At times, the tomatoes do not have a concentrated flavor. If this happens, you can add a little more tomato paste.
  5. Basil

    In the final 2 minutes add the basil and check the salt and pepper levels. Remove the garlic, and there you have it! Serve with your favorite pasta/spaghetti.

    You can serve with parmesan if desired.
