Slice up the zucchini and onions.
Chop the parsley (frozen or dried works too) and garlic.
Saute zucchini onions in olive oil. Half way through add the garlic. At the end, add the parsley, and salt and pepper to taste.The goal is some color on the zucchini but not mushy. A medium high heat is best and it only takes a few minutes.
