Perfect with a salad for a light lunch, in a sandwich, or just for snacking.

Shrimp cakes
Ingredients
Instructions
Gather your ingredients and chop the veggies.
Prep
Chop the shrimp (or use the food processor, but not to a paste). Add the veggies and the rest of the ingredients.
Form the cakes
Make 6 patties. Leave them to rest for 5 minutes.
Cook
Heat a pan with 2 TBL of olive oil. Fry the shrimp cakes until brown on both sides. Between each turn add 1 TBL of oil.
Serve right away
Serve with Creamy Cajun sauce for a spicy touch along with a salad and a slice of Focaccia bread for a wonderful lunch.

This recipe makes 6 shrimp cakes. To calculate for snacks, it would be one per person, 2 per person if for a light lunch with a salad, or 3 if you are hungry.
For a spicy version, add 1/2 a finely chopped jalapeño to the veggies.
