  1. Chop tomatoes and slice onions and basil.
    Tip: The flatter the onion the less sharp the flavor.
  2. Tip- stack basil one on top of the other, roll up and slice.
  3. Dress with olive oil, balsamic vinegar, salt and pepper.
    We like a bit of minced garlic. If your balsamic vinegar is a bit sharp, you can add a touch of honey to sweeten it. Cucumbers and garbanzos are a nice addition too.
