  1. Saute the bacon in a little olive oil.
  2. When cooked, take it out if the pan and set aside. Do not get rid of the oil!
  3. Use the oil to sauté the onions, carrot, celery, garlic, and thyme. Sauté the vegetables 3-4 minutes.
  4. Add the black pepper and hot pepper.
  5. Add beans and the cooking liquid. If using canned beans, I would recommend straining the canning liquid (too much salt) and subbing it with 1-2 cups of chicken broth and/or water.
  6. Cook until soft.
    At this point you can smash some of the beans to thicken the soup or leave whole.
  7. Add the bacon in and the parmesan if desired.
  8. Season to taste with salt, more thyme and pepper.
  9. Enjoy with good bread and a drizzle of olive oil.

Notes

Se puede omitir el tocino si quiere hacerlo vegetariano. Si desea sin lácteos, omitir el queso parmesano.

Para olla lenta, cocine los frejoles hasta medio cocinado. Luego siga los pasos 1-4 y añadirlo a la olla lenta. Finalmente añade el queso y tocino al final.
