The amount of each item of the filling will depend on the taste and quantity of backpacks you will make.
Good judgement is needed for the quantities based on your preferred taste and the amount you will make.
Fry everything in a frying pan and add:
- Grated cheese
- Cream cheese or curd
Stir in a deep bowl with a spoon.
With your zucchini in strips, place them in a crisscross pattern. Place a spoonful of stuffing in the middle.
Fold the ends of the zucchini to cover the filling.
Place in a greased pan with olive oil.
Repeat the process until the desired amount.Tip: If you have difficulty leaving the backpack well positioned in the pan without it opening, use a toothpick so that they do not open while cooking.
Put tomato sauce on top, as well as cheese and oregano to taste. Bake for about 30 min in a preheated oven. Serve hot as starter or main course.Remember that baking time is only for cooking the zucchini and heating the filling.
